The Molino Norte region of Matagalpa sits in the northern highlands at 900–1,590 meters, where smallholder farmers tend their coffee in clay mineral soil with the patience of people who understand that the earth has its own timing. Each harvest is fully washed, then surrendered to fermentation for 12–14 hours — a sacred pause in which the coffee transforms in the dark, developing layers of complexity that could not exist without the waiting. Then dried on patios and raised beds under the open sky, where both oceans send their winds.
