In the highlands of the Sidama zone, legend holds that a goat herder named Kaldi first noticed his flock dancing with unusual energy after eating red berries from a certain tree. The monks of a nearby monastery brewed those berries into a drink to sustain their nighttime devotions — and the world was never the same. Every cup of coffee ever drunk traces its lineage back to this land, these highlands, these people.
The natural process — where the whole coffee cherry is dried intact on raised beds, allowing the fruit to ferment around the seed — is the oldest processing method in the world. It is how coffee was first prepared. Our Ethiopia Natural honors that origin: indigenous heirloom cultivars, hand-sorted by smallholder farmers in the Sidama zone, dried on raised beds in the ancient way.
